Classic Vanilla Sponge Cake Recipe

Ingredients:

✅ 1 ½ cups (190g) all-purpose flour

✅ ½ tsp baking soda
✅ ¼ tsp salt
✅ ½ cup (113g) unsalted butter, room temperature
✅ ¾ cup (150g) sugar
✅ 2 large eggs, room temperature
✅ 1 tsp vanilla extract
✅ ½ cup (120ml) milk, room temperature
✅ 1 tsp vinegar or lemon juice (for extra softness)


Instructions:

1. Preheat & Prepare

  • Preheat your oven to 170°C (340°F).
  • Grease and line a 7-inch round cake pan with parchment paper.

2. Sift the Dry Ingredients

  • In a bowl, sift together flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter & Sugar

  • Beat butter and sugar with a hand mixer until light and fluffy (about 2-3 minutes).

4. Add Eggs & Vanilla

  • Add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract.

5. Alternate Wet & Dry

  • Add the dry ingredients in three parts, alternating with milk + vinegar, starting and ending with dry ingredients.
  • Gently fold the batter—don’t overmix!

6. Bake to Perfection

  • Pour batter into the prepared pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Enjoy

  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
